This is possibly the most traditional pickle in Calabria. These aubergines are tasty and crispy, and the chilli gives that extra bite which make this a must have in any Southern Italian kitchen. This is exceptional as a topping on your tomato bruschetta, or you can it as an antipasti.
Ingredients: aubergines, extra virgin olive oil, chilli, aromatic herbs, vinegar, salt.
This has a 18+ months shelf life. Once opened, keep refrigerated and use within 4 weeks (if drying out, top up your jar with extra-virgin olive oil)
